    Crab Cake Egg Rolls

    If you haven't tried crab cake egg rolls, you are missing out!  I was able to enjoy these tasty rolls at a restaurant in my hometown of Crisfield, Maryland called Fisherman's Grille.  Once I found out about this savory alternative to regular Maryland crab cakes, I had to make some for myself!  Crab cake egg rolls are crispy on the outside, and loaded with delicious Maryland crab cake flavor on the inside!  Perfect as an appetizer or snack, they are easy to make and will be a great addition to any event or party!

    Ingredients
    1 lb Maryland lump crab meat (picked over for shell, can also use jumbo lump or claw meat)
    2 eggs
    2 1/2 Tbsp mayonaisse (we use Duke's!)
    1 1/3 tsp dijon mustard
    1 tsp Old Bay or J.O. Spice
    1/4 tsp salt
    1.5 Tbsp parsley (finely chopped)
    1 tsp Worcestershire sauce
    1/3 cup of panko style bread crumbs
    10-15 egg roll wrappers
    1 egg (for sealing wrappers, whisked with 1 tbsp water)
    Vegetable oil (for frying)

    Directions
    Make the crab cake filling: In a large bowl, mix the eggs, mayonaisse, mustard, Old Bay, salt, parsley, Worcestershire sauce, and breadcrumbs until combined.  Fold in crabmeat, carefuld not to break it up.
    Assemble the egg rolls: Lay an egg roll wrapper on your cutting board, and place 1-2 tablespoons (depending on how much crabmeat you want in each bite) of crab cake mixture in the center.  Brush the corners with the egg mixture, and fold the botttom corner, then the sides, and roll tightly.  Brush the top corner with the egg mixture to seal.
    Time to cook- there are a few options for you to choose from:
    Deep Fry: Heat 2-3 inches of vegetable oil in a deep pan to 350° F.  Fry the egg rolls in batches for 2-3 minutes per side, until golden brown and crispy.  Drain and pat dry with paper towel.
    Bake: Line up on greased cookie sheet and bake at 400° F for about 15 minutes, flipping halfway through
    Air Fry: Spray rolls with avacado oil and place in the air fryer at 375° for 10 minutes
    Serve & Enjoy: Pair with your favorite sauce (we recommend sweet chili aoli, but a creamy remoulade sauce or classic tartar sauce can be used!) and dip to send your taste buds on a wonderful journey!
