Crab Stuffed Flounder
Ingredients:
4 flounder fillets
1/2 lb lump crab meat
1/2 cup breadcrumbs
1/4 cup mayonnaise
1 tbsp Dijon mustard
1 tbsp lemon juice
1 tsp Old Bay seasoning
1/2 tsp garlic powder
1/4 cup chopped parsley
1 egg, beaten
2 tbsp melted butter
Salt & pepper to taste
Instructions:
Preheat oven to 375°F. Lightly grease a baking dish.
In a bowl, mix crab meat, breadcrumbs, mayo, mustard, lemon juice, Old Bay, garlic powder, parsley, egg, salt, and pepper until combined.
Lay flounder fillets flat and spoon crab mixture onto one side of each fillet. Fold over and place in baking dish.
Brush with melted butter and bake for 20 minutes, or until the fish is flaky.
Serve with lemon wedges and enjoy!
